Information from the abstract
Green soybean (edamame) is a valuable source of bioactive phytochemicals with potential applications in healthy ageing and functional foods. This study developed a scalable process combining enzyme-assisted (1% enzyme, 60 min) and ultrasound-assisted (50% amplitude, 15 min, 30°C) extraction followed by spray drying to obtain a phenolic-rich green soybean extract containing estimated procyanidin-related compounds and isoflavones. The extract demonstrated angiotensin-converting enzyme (ACE) and tyrosinase inhibitory activities, suppressed the proliferation of HCT-116 colorectal cancer cells in a concentration- and time-dependent manner, and showed no cytotoxicity toward normal human fibroblast (BJ) cells. Moreover, the extract protected against oxidative stress-induced telomere shortening, suggesting potential cellular anti-ageing effects. Refrigerated storage better preserved phenolic compounds, estimated procyanidin content, and antioxidant capacity than ambient storage during the 12-week study. A prototype powdered beverage formulated with the extract achieved moderate overall acceptability comparable to that of a commercial product. Collectively, these findings demonstrate the phytochemical quality, in vitro biological activities, storage stability, and consumer acceptability of the procyanidin-containing green soybean extract. However, further in vivo , bioavailability, and pharmacokinetic studies are required to establish its potential for functional food, nutraceutical, and cosmeceutical applications.
